Cutisin collagen casings are ideally suited for all salami specialities and for dried sausage niche applications. The all natural components of these casings enable a micro-climate which guaranrees excellent aroma development and an even, steady release of moisture. Whether air-dried, smoked or mould-ripened the excellent maturing characteristics are beneficial to all dried sausage production processes. Each casing type stands out with enhanced characreristics, such as filling strenght, shrinkage, transparency or emulsion adhesion, and as such, fulfils the essential requirements for given production processes. The superior appearance of Cutisin collagen casings accentuates your products natural character. The base material collagen ensures that cellulase activity in connection with mould-ripening is not an issue.

Cutisin 014, with its appealing natural surface, is the perfect casing for all salami i specialities wher+ther air-dried, smoked or mould-ripened. Even at very low temperatures (-4°C) it resists filling stranis, making it ideal for niche applications which must live up to industrial demands. Cutisin 014 is also available in a mahogany tint which is popular for intensifying the smoke colour of smoked salami.

A casing for very strong mechanical stranis. Suitable for all dried sausage types, particularly those to be filled with bigger chunks of meat and subsequently subjected to a dry-ripening process (e.g. Buendner Fleisch, Pastrami, Rohkassler or Pancetta).

Calibres, colours, packaging forms:

Cutisin collagen casings are available in all standard calibres either on reels, tied or shirred. The standard shipping colour is “natural” although other colours are available on request. Additionally you can opt for our “Ready to Use” variant. It goes without saying, that custom configurations such as sewn shapes are also possible. Cutisin also offers printing of these casings.

  • High concentration = flexibility and good clipping performance.
  • Low concentration = high flexibility but low clipping performance.
  • RTU (“Ready to Use”) casings dont require soaking.
  • Stuff casings to the recommended diameter immediately after the indicated soaking time.
  • To prevent demage to the casings, care should be taken that the proper clip is user and that the appropirate clip pressure and separator settings are chosen.
  • Adjust meat emulsion temperature to the stuffing requrements.

Additional points for RTU “Ready to Use” casing

  • Dont soak RTU casings
  • Stuff to recommended stuffing calibre
  • Avoid overstuffings – observe stuffing calibre

Storage conditions

  • Store unopened cartons cool and dry (5°C - 25°C)
  • Reseal opened packages in an air tight container or bag to prevent moisture loss particularly with RTU variant
